A great recipe to turn cauliflower stalk into a very delicious ferment.

I used:

  • Cauliflower stalk
  • Radish
  • One onion
  • A cauliflower floret
  • Fennel seeds, peppercorns
  • 1 clove of garlic

Slice the vegetables, press them into a jar, and add the classic salt brine with untreated salt (I dissolved it beforehand in boiling water and then let it cool down).

I also added fennel seeds, peppercorns, and a clove of garlic.

On top, add the green of a watermelon or a cabbage leaf works well, and then something heavy to push it down, and that’s it! Let it ferment for a good week, and it’s done!
