You should definitely try this!! Fermented leek is absolutely delicious!!

I roughly cut the leek into 15cm long pieces, squeezed it into the jar, and added salt brine! For fermentation, I made sure everything stays below the brine, so I put another, smaller jar filled with water on top. That’s it! Let it ferment for a week or a bit longer in winter, and there you go!
